Scalloped Corn
2 cps. fresh corn, cut from the cob.
1 tsp salt
1/8 tsp pepper
3 tbsp cracker crumbs
2 tbsp butter or fortified margerine.
1 egg, beaten
1 cp milk
Instructions
1 - Place half the corn in the botom of a greased casserole.
2 - Season with half the salt and pepper and sprinkle with half the cracker crumbs.
3 - Dot with butter or margerine.
4 - Add remaining corn, sprinkle over it the remaining seasoning, cracker crumbs, and butter.
5 - Beat the egg and milk together and pour over the corn.
6 - Place casserole in a pan of hot water.
7 - Bake in 350 degree oven about 1 hour or until custard is set.
8 - Do not overbake or the custard will curdle.
