Baked Stuffed Peppers
6 green peppers
2 tbsp bacon drippings
2 tbsp chopped onion
2 cps leftover meat, ground
2 cps soft bread crumbs
1 cp tomato sauce
1 tsp salt
1/8 tsp pepper
1/2 cp dry bread crumbs, buttered
Instructions
1 - Wash peppers, cut slices from stem and remove seeds.
2 - Steam for 10 minutes in deep well cooker or large utensil.
3 - Brown onion in shortening.
4 - Mix well with other ingredients except buttered crumbs.
5 - Fill the peppers with the mixture, then top with buttered crumbs.
6 - Stand peppers in a casserole or loaf pan.
7 - Add hot water to the depth of 1/2 inch.
8 - Bake 35 minutes in preheated 375 degree oven.
Tomato Sauce:
2 tbsp shortening
2 tbsp enriched all-purpose flour
1 cp tomato juice
1/2 tsp salt
1/2 tsp sugar
1 tbsp chopped parsley
1 tbsp chopped celery leaves
Melt shortening, stir in flour, add tomato juice, stirring constantly
until thickened. Add salt, sugar, chopped parsley and celery leaves.
