Stuffed Green Peppers
5 green peppers
3 tbsp chopped onions
1/4 cp shortening
1/2 tsp poultry seasoning
3 cps cooked rice, drained
1 1/4 tsp salt
1/8 tsp pepper
Instructions
1 - Wash peppers, cut slice fro stem end and remove seeds.
2 - Steam for 10 minutes in large covered sauce pan.
3 - Brown onion in shortening, add seasoning and rice.
4 - Fill peppers with rice mixture.
5 - Place in greased baking dish.
6 - Cover with sauce and bake for 30 minutes in preheated 350 degree oven.
Tomato Sauce:
4 tbsp shortening
4 tbsp enriched all-purpose flour
2 cps tomato juice
1 tsp salt
1 tsp sugar
sprig of parsley
small onion
celery tops
For sauce melt shortening, stir in flour, add tomato juice, stirring constantly until thickened. Add salt, sugar, parsley, onion, and a few celery tops.
Pilaf or Savory Rice or Hoppin' John with Lentils may be used as a stuffing for these peppers, inn which case the tomato sauce is not necessary.
