Hash Browned Potatoes
3 cps diced, cooked potatoes
3 tbsp shortening
salt and pepper to taste
milk,about 1/4 cp.
Instructions
Use a medium size skillet. Heat shortening, add diced potatoes, seasoning and sufficient milk to moisten, about 1/4 cp. Cover. Cook slowly, stirring only until milk is absorbed. If using elec- tric range, turn switch to low and turn potatoes only once. On other type ranges turn heat low. It may be necessary to stir more frequently.
