Dutch Oven Dinner
1 1/2 lbs round steak
6 small carrots
2 stalks celery
3 slices onion
4 tbsp bacon fat
3 large potatoes, halved
3/4 cp water
1 tsp salt
1/8 tsp pepper
1 tbsp enriched all-purpose flour
2 tbsp water
1 - Cut steak into 6 individual servings.
2 - Rub with salt and pepper
3 - Dredge with flour and pound slightly as for Swiss steak.
4 - On each piece of meat, place a small carrot cut in quarters
and 3 slivers of celery.
5 - Wrap steak around vegetables and fasten with toothpicks.
6 - Brown on all sides in the bacon fat
7 - Add the halved potatoes and 3/4 cp water.
8 - Cover and when boiling, turn to simmer for 1 hour.
9 - Remove to a platter. Thicken the drippings with 1 tbsp flour
blended with 2 tbsp water.
