Fried Liver and Onions
1 lb liver
bacon drippings
2 lbs onions
1/4 cp enriched all-purpose flour
1 tsp salt
1/2 tsp pepper
Instructions
1 - Cover liver with boiling water, Drain off water immediately.
2 - Mix flour, salt and pepper together and dredge liver with it.
3 - In skillet place 3 tbsp bacon drippings.
4 - When hot, add liver and brown on both sides.
5 - Peel and thinly slice onions.
6 - Place onions over liver, add 1 tbsp water and reduce heat to low.
7 - Cook 25 minutes. It may be necessary to add more salt to the onions.
Pork liver is wonderful from health standpoint, also cheaper to buy.
Beef liver is next, and calves liver, the most expensive, doesn't furnish
as many of the necessary vitamins.
Pork liver is a little stronger in flavor the the others but the onions help
conceal this.
