Beet and Lettuce Salad
4 spring onions, sliced fine.
2 cooked beets, chopped
6 tbsp salad oil
1 head lettuce
4 tbsp vinegar
1 uncooked egg yolk
1/2 tsp salt
1/2 tsp dry mustard
1/4 tsp sugar
Instructions
1 - Beat egg yolk with a fork
2 - Add onions, salt, sugar, mustard, and oil.
3 - Just before serving add vinegar.
4 - Chop lettuce into medium size portions and place in a large bowl.
5 - Add chopped beets. Pour dressing over this.
6 - Take two forks and gently lift the lettuce so dressing will permeate the salad.
