Corn Meal Squares with Spanish Sauce
4 cps milk
1 cp corn meal
1 1/2 tsp salt
1 cp grated cheese
1/2 tsp dry mustard
Spanish Sauce
2 cps canned or cooked tomatoes
1/4 cp chopped celery
1/4 cp chopped green pepper
2 tbsp minced onion
1 tsp salt
1/8 tsp pepper
1 tsp sugar
1 tbsp cornstarch
Instructions
1 - Scald 3 cps milk.
2 - Mix other cp of milk with the corn meal and stir into the scalded milk.
3 - Add salt. Cover and allow to simmer for 45 minutes.
4 - Add cheese and stir until cheese is melted.
5 - Add mustard and pour into a greased 8" square pan.
6 - Cover with waxed paper and let it cool.
7 - Cut into 2" squares and place in greased utility dish.
8 - Cover with hot Spanish Sauce and bake for 20-25 minutes
in a preheated 350 degree oven.
9 - To make sauce: Cook all ingredients except cornstarch for 15 minutes.
10 - Stir cornstarch with a little water and add to Spanish Sauce.
