Creamed Chicken
2 cps. cooked chicken removed from bones, diced or cur in strips.
2 cps white sauce
1/2 tsp salt
Dash celery salt (optional)
Instructions
1 - Heat chicken in white sauce(see recipe for White Sauce below).
2 - Use simmer heat on an electric range, a very low flame on other type ranges.
3 - One cp cooked vegetables such as peas, celery, carrots, may be substituted
for 1 cp of chicken.
White Sauce
3 tbsp butter or fortified margerine
3 tbsp all-purpose enriched flour
2 cps milk
1/2 tsp salt
Use a ssmall skillet over medium heat on an electric range;
for other type ranges it is better to use a double boiler.
Melt butter or margerine. Add flour, then milk, stirring constantly.
Cook until thick, then add diced chicken.
Serve on hot toast, rice, or noodles.
