Chicken with Dumplings
Select a plump chicken. Cut in pieces.
Place in deep well cooker if using an electric range.
To a 4 lb chicken, add about 3 cps boiling water, 2 tsp salt.
Cover. Cook on high heat until steaming, then switch to low heat.
Simmer slowly until chicken is done, 3 to 3 1/2 hours.
If cooking on other type fuel range, use large kettle with cover.
Bring to a quick boil, then reduce heat and simmer slowly.
Prepare dumplings. There must be plenty of liquid to leave for some gravy,
and as the dumplings will absorb some of this liquid, check amount before
adding the dumplings.
If more water is added, bring to a quick boil, before dropping in dumplings.
Drop by teaspoonfuls into boiling broth, leaving chicken in to help hold
dumplings in place.
Cover closely. Boil 12 minutes. Serve at once.
