Roast Chicken
The chicken may be roasted in either a preheated oven or from a cold start.
For a 4-5 lb chicken, roast 2 - 2 1/2 hours with oven set at 350 degrees.
Instructions
1 - Weigh the stuffed bird to find the total cooking time required for roasting
2 - Lay the bird on a rack in an open pan.
3 - Brush the skin thoroughly with melted shortening.
4 - An excellent idea is to use fried out chicken fat.
5 - Cover the bird with a piece of cheesecloth or thin muslin and also
brush it with shortening.
6 - The cloth may be removed the last 15 or 20 minutes of roasting time
so the bird will brown.
7 - Don't attempt to roast an old bird. Instead, stew it and serve
with dumplings or noodles.
