Fried Fish
Place 1/2 inch of shortening in a skillet.
Heat shortening until very hot, but not smoking.
Season fish, roll with salt and pepper in cracker crumbs or corn meal.
Brown fish on one side, then turn and brown the other side.
Serve very hot.
To clarify remaining shortening, fry in it a few thick slices of
raw potatoes until brown and well done.
