Scalloped Eggs
6 hard cooked eggs, sliced
2 tbsp shortening
2 tbsp all-purpose enriched flour
2 cps milk
2 tsp salt
1/8 tsp pepper
1/4 tsp paprika
1 tbsp chopped parsley
1/2 cp buttered bread crumbs
Instructions
1 - Melt shortening, stir in flour.
2 - Add milk and bring slowly to a boil, stirring constantly
until thick and smooth.
3 - Add salt, pepper, paprika and chopped parsley.
4 - Place a layer of sliced egg in a greased utility dish,
cover with half the sauce, then put another layer of eggs
and cover with remaining sauce, then top with buttered bread crumbs.
5 - Bake in preheated 400 degree oven for 25 minutes.
