Bean and Barley Soup
1 cp lima beans
6 cps cold water
2 tsp salt
1/4 tsp pepper
2 slices onion
1 small carrot
3 tbsp barley
1 cp evaporated milk
2 tbsp butter or fortified margerine
Instructions
1 - Soak beans overnight.
2 - Drain. Sdd cold water and salt.
3 - Cook until almost tender.
4 - Cut onion and carrot into small pieces.
5 - Add vegetables and barley to beans and cook together until soft.
6 - Add milk and butter before serving.
7 - Peas or lentils may be used instead of beans.
Make 6 servings
