Buttered New Green Peas
For a family of five, buy about 3 lbs of peas.
Do not shell them until ready to cook.
However, if necessary to prepare in advance, stor in covered utensil
in the refrigerator to preserve the vitamin content.
Place peas, 1/4 cp of water and seasonings in a covered utensil.
Bring to a quick boil, then simmer for 20 minutes.
Add 2 tbsp butter or fortified margerine, or if desired
3 tbsp of cream.
