Scalloped Tuna
1 small can tuna
4 tbsp butter or fortified margerine
4 tbsp all-purpose enriched flour
1 tbsp chopped onion
2 cps milk
1 tsp salt
1/8 tsp pepper
2 hard-cooked eggs
1 bay leaf
2 tsp chopped parsley
1/2 cp buttered bread crumbs
Instructions
1 - Melt butter or margerine, add flour and chopped onion.
2 - Cook slowly for several minutes, stirring constantly.
3 - Add milk slowly, and cook until thick and smooth.
4 - Add salt, pepper, bay leaf, and chopped parsley.
5 - Put half of the tun a fish in the bottom of a greased casserole,
then 1 egg sliced, and half the white sauce.
6 - The repeat, using the other half of the ingredients.
7 - Cover with buttered crumbs.
8 - Bake 20 minutes at 400 degrees.
