Mock Chicken, Noodles
1/2 lb veal shoulder
1/2 lb pork shoulder
4 cps water
1 cp diced celery
1 carrot, diced
1 tbsp minced parsley
2 tbsp minced onion, 1/4 lb noodles, uncooked
3 tsp salt
1/4 tsp pepper
2 tbsp butter or fortified margerine
Instructions
1 - Cut veal and pork in 1 inch cubes.
2 - Add water, celery, carrot, parsley and onion.
3 - Boil until nearly tender (1 1/2 hours)
4 - Add noodles, salt, and pepper.
5 - Cook fifteen minutes, add butter or margerine and serve.
