Baked Beans (American Style)
1 qt beans, measured and washed
1 lb salt pork, scored down to rind, but not through rind
1 large onion, peeled and scored on the top
1 tbsp salt
1/2 cp molasses
1/2 cp brown sugar
1 tsp dry mustard
6 cps water
Instructions
1 - Pick over the beans and wash thoroughly.
2 - Cover with water and soak overnight.
3 - Cook in same water until the skins pierce easily. Simmer but do not boil.
4 - Drain, but keep the water.
5 - Remove the rind and wipe off the salt pork.
6 - Put a thin slice in the bottom of bean pot
7 - Cut the rest of the salt pork every half inch making cuts 1 inch thick.
8 - Put half the beans in the pot, cover with onions then add the remaining beans.
9 - Bury the salt pork in the beans.
10 - to a cup of boiling leftover water, add molsasses, brown sugar, salt,
mustard, and pour over beans.
11 - Bake 6-8 hours at 250 degrees. Add water as necessary.
12 - Uncover last hour of cooking time.
