Baked Lentils with Diced Salt Pork
4 medium onions
1/2 cp shortening
2 cps quick-cooking lentils
1/4 lb salt pork
2 1/2 qts boiling water
2 tsp salt
1 bay leaf
Instructions
1 - Peel the onions and slice.
2 - Brown slightly in the shortening.
3 - Rinse lentils in cold water.
4 - Simmer lentils and salt pork in boiling salted water for 45 minutes.
5 - Drain, reserving liquid.
6 - Place alternate layers of lentils and onions in greased casserole
and add 2 cps reserved liquid.
7 - Cover and bake in preheated 350 degree oven for 45 minutes.
Serves 6.
