Gnocchi with Cheese Sauce
Gnocchi:
1/2 cp quick-cooking sheat cereal
8 cps boiling water
1 tsp salt
1/4 cp butter or fortified margerine.
1 egg
Cheese Sauce:
3 tbsp butter or fortified margerine
4 tbsp all-purpose enriched flour
1 tsp dry mustard.
1 tsp salt
2 cps milk
2 cps grated cheese
Instructions
1 - Cook cereal in boiling, salted water for 5 minutes.
2 - Add butter or margerine, or drippings and beaten egg.
3 - Pour into greased baking dish(about 7 x 11 inches),
4 - and let it stand until cool.
5 - Cut into squares, place squares on a shallow pan (1 x 14 inches),
and cover with cheese sauce.
6 - Just before serving, place under the broiler about 5 minutes.
For the sauce, melt butter or margerine and add flour, mustard and salt.
Blend well. Add milk, stirring constantly until thickened and add cheese,
stirring until cheese is melted.
