Beets Polonaise
1 tbsp unsifted all-purpose enriched flour
2 tbsp sugar
3/4 tsp salt
1/4 tsp pepper
2 tbsp vinegar
1 tbsp lemon juice
2 tbsp butter or fortfied margerine
2 cps shredded cooked beets
1/2 cp thick sour cream
Instructions
1 - Mix the dry ingredients, add vinegar, lemon juice and butter or margerine.
2 - Cook slowly until thickened, stirring constantly.
3 - Add beets, mix well.
4 - Add sour cream, mix again and bring to boiling point.
5 - Serve at once.
Makes 6 servings.
